Ingredients:
- 4 egg whites
- 250g granulated sugar
- Mix the above together and make three meringue rounds.
- Use a big sandwich cake tin as a template.
- Bake at 200F for three hours.
Filling:
- 125 g sugar
- 5 tbs water
- 4 egg yolks
- 340g unsalted butter
- 3 tsp instant coffee dissolved in 2 tsp hot water
Method:
1. Dissolve sugar in water over the heat until it starts to thicken, swirl around in pan until it is quite thick.
2. Beat egg yolks and add sugar syrup, beat until thick and creamy.
3. Cream butter and add egg and sugar mixture to it.
4. Add coffee.
5. Sandwich meringue with layers of filling.
6. Cover top with toasted almonds.
Helens Sugar Art Tip...
As an alternative I mix chocolate and marzipan to a paste consistency and spread over the gateaux and then the almonds.
