7 minute frosting or foam frosting 

This icing is lovely, light and fluffy and can be swirled on top of cupcakes and is like soft meringue. The top sets.

Do not cook any longer than necessary as it will crystallize so watch it all the time.


375ml white castor sugar 

2 egg whites 

80ml cold water 

1ml cream of tartar 

Pinch salt 

2ml vanilla essence 


  1. Combine all the ingredients except the vanilla in the top of a double boiler. 

  2. Beat to mix well. 

  3. Place over boiling water. 

  4. Beat continuously until mixture forms a frosted soft peak.

  5. Make sure that the side and the bottom is stirred approximately 3 times so that the icing does not cook quicker in these places. 

  6. Remove from the heat, add vanilla and use immediately.
